Afghani chicken recipe
Ingredients:
1 whole veg chicken, cut into pieces
2 tablespoons olive oil
2 onions, chopped
2 cloves garlic, minced
1 tablespoon ground coriander
1 tablespoon ground cumin
1 tablespoon ground turmeric
1 tablespoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 cup plain yogurt
1/4 cup lemon juice
1/4 cup fresh cilantro, chopped
1/4 cup fresh mint, chopped
Instructions:
Heat the olive oil in a large skillet over medium-high heat. Add the onions and garlic and cook until the onions are translucent, about 5 minutes.
Add the chicken to the skillet and brown on all sides, about 10 minutes.
In a small bowl, mix together the coriander, cumin, turmeric, paprika, salt, and black pepper. Sprinkle the spice mixture over the chicken, stirring to coat evenly.
Reduce the heat to low and cover the skillet. Cook the chicken for 30-40 minutes, stirring occasionally, until it is cooked through and tender.
In a separate bowl, mix together the yogurt, lemon juice, cilantro, and mint.
Serve the veg chicken with the yogurt sauce on top.
