Vegan curry sauce

 Here's a recipe for a delicious vegan curry sauce:


Ingredients:

1 tablespoon vegetable oil

1 onion, chopped

2 cloves garlic, minced

1 tablespoon grated ginger

2 tablespoons curry powder

1/2 teaspoon ground cumin

1/2 teaspoon ground coriander

1/4 teaspoon cayenne pepper

1 can (14 oz) diced tomatoes

1 can (14 oz) coconut milk

Salt and pepper to taste

Instructions:


Heat the vegetable oil in a large saucepan over medium heat. Add the chopped onion and sauté until softened and lightly browned, about 5-7 minutes.

Add the minced garlic and grated ginger to the saucepan and sauté for another minute, stirring constantly.

Add the curry powder, ground cumin, ground coriander, and cayenne pepper to the saucepan and stir to coat the onion mixture with the spices.

Add the diced tomatoes (including their juice) to the saucepan and stir to combine. Bring the mixture to a simmer and let cook for 10-15 minutes, until the tomatoes have broken down and the sauce has thickened slightly.

Pour in the coconut milk and stir to combine. Let the sauce simmer for another 5-10 minutes to let the flavors meld together.

Season the sauce with salt and pepper to taste. If the sauce is too thick, you can add a little bit of water to thin it out.

Use the vegan curry sauce as desired - it's perfect for serving over rice or vegetables, or as a dipping sauce for naan or other breads. Enjoy!
